Watermelon and Goat Cheese Salad with Citrus Vinaigrette
For the Vinaigrette:
3 tablespoons extra-virgin olive oil
3 tablespoons orange juice
1 tablespoon red-wine vinegar
¼ teaspoon salt
Pepper to tasteWhisk all above in a large bowl, add 4 cups diced seedless watermelon and ¼ cup very thinly sliced red onion. Coat the fruit and onions with the vinaigrette.
Divide mixed salad greens onto plates, layer on the fruit, and drizzle with dressing from bowl. Top with some crumbled goat cheese.
Makes about 5 servings.

OOh boy! This sounds totally mouthwatering! Definitely going to try it... and (don't scream) substitute an extra low fat cheese (MIGHT work...) as I'm still on the low fat diet kick (for the foreseeable future, lol).
Any more recipes like this??
